A wonderful strawberry dessert that everyone likes

Around this dessert, you can imagine a group of young friends, a family, children, all of them always with your mouth watering! Everyone likes this dessert, made with simple, essential and tasty ingredients. A sweet at the same time fresh, nutritious and light. Nothing is missing from this strawberry cheesecake slice: fruit, sugar, butter, chopped biscuits, but above all there is no shortage of goodies.
With each taste, we can appreciate the creaminess of the cheese, the crunchy flavour of the biscuit base and the sour-fruity flavour of the strawberry glaze with lemon juice. A decisive but generally "familiar" flavour considering that strawberries are among the best known and most appreciated fruits and that all the components of this dessert are appreciable even if consumed individually. However, these ingredients seem to have been born to be together!

The season of strawberries and cheesecakes

If strawberries are your favourite fruit, this version of the strawberry and cheese cheesecake will soon become a must in your kitchen. From February to May, strawberries are at their maximum production and we can, therefore, have more tasty, cheap and genuine raw materials.
In this season from the end of winter to spring, we can indulge ourselves to the maximum with strawberry-based recipes. In addition to this cheesecake, you may wonder how many recipes are made with strawberries, even delicious in a salty version as in risotto and in side dishes for salads and meat. And here's the recipe for the strawberry and cream cheese cheesecake:

Ingredients for a 22 cm mould:

250 g of shortbread or dry biscuits allowed
130 g of clarified butter
400 g Lactose-Free Cream Cheese
250 g of whipped cream
100 g of sugar
10 g of gelatine
1 teaspoon lemon juice

For the strawberry sauce:
250 g of strawberries
2 spoons of sugar
1 spoonful of water

Preparation:


To prepare our strawberry cheesecake, soak the gelatine in freshwater for about 15 minutes. Drain the glue and add it to the heated cream, stirring until there are no more lumps. Let the cream cool and in the meantime, put the biscuits with the melted butter in the blender. Finally, mix the butter and biscuit mixture carefully. Line a cake mould with a sheet of parchment paper and compact a layer of biscuits and butter on it. Level the mixture until it is about 1 cm thick, then put the base to cool in the fridge for about 30 minutes. In a clean bowl, add the cream cheese to the sugar and whipped cream. Add the lemon juice and mix everything together with the cheese. At this point, the cheese mixture should be poured over the biscuit base.

Level the cheese mixture well on the cheesecake and put everything in the fridge for another 30 minutes to compact. At this point, dedicate yourself to the preparation of the strawberry sauce. Wash the fruit, peel and blend them, leaving some strawberries aside for the final decoration. In a saucepan, heat the blended strawberries, two tablespoons of sugar and 1 tablespoon of water until a thick sauce is formed. Let the strawberry sauce cool and then pour it on top of the cheesecake. As a finishing touch for the final decoration, put some cut strawberries. Before serving the strawberry cheesecake, leave it to rest in the fridge for at least half a day so that all the ingredients can be combined and flavoured at best.
