How to make a chicken pancake with cheese:

Start with the filling: Season the chicken with black pepper, paprika and garlic.

Put a little oil in a pressure cooker and cook. Add the chicken and cook until golden.

Tip: At this stage, the chicken doesn’t need to cook on the inside, just brown on the outside.

Add half a cube of chicken stock and add water until almost covered. Cook on pressure for 10 minutes (count the time after the pan starts to sizzle).

After the previous step, remove the chicken from the pan, shred and reserve 100 ml of the cooking broth.

Continue preparing the chicken stuffing for the pancake: in another pan over medium heat, saute the onion well chopped with a little oil.

Chicken pancake

When the onion is golden, add the shredded chicken and the remaining ingredients for the filling (tomato sauce, cream cheese, water, olives, corn and chives). Bring to a boil over low heat until it forms a very creamy filling, as shown in the photo, and turn off. In the end, adjust the salt if needed.

Chicken pancake

For the chicken pancake batter, beat all the ingredients (except the yeast) until very consistent. You can use the mixer or blender to blend.

Chicken pancake

Finally, add the yeast and beat gently, just to mix. The pancake batter is very liquid, as shown in the photo.

Tip: Be careful not to overdo the flour as this can make your dough heavy and thick.

Chicken pancake

Grease a skillet with a little margarine and let it heat up. Once it’s hot, add half a ladle of dough right in the centre of the pan and make a circular motion to spread it over the entire surface.

Chicken pancake

Once the edges start to lift, it’s time to turn the pancakes with the aid of a spoon.

Chicken pancake

To fill the pancake with chicken, place 2 tablespoons of the filling on one edge and roll it like a roulade.

Chicken pancake

Arrange all pancakes in a glass baking dish, cover with a little filling and sprinkle with grated mozzarella. Bake for 10 minutes or until cheese is melted.

Chicken pancake

And that’s the result of the simple chicken pancake! So light and thin that it’s impossible to resist! everyone will love this dish! Try it at your home and tell us what you think. Enjoy your food!

How to make cassava soup with chicken:

Season the chicken with 1 clove of garlic, 1 teaspoon of paprika, pepper and salt to taste. Heat the pressure cooker with the oil over medium heat and place the chicken in it.

Tip: I used boneless chicken breast because it’s easier to shred, but you can use any piece of chicken. To avoid adding more calories and fat to this recipe, do not use skinned chicken.

Cassava Soup

Fry the chicken until golden on all sides. Then cover with water and cook for 15 minutes after gaining pressure. Remove chicken and shred.

Cassava Soup

In the same pan, place the cassava to cook in the chicken stock. Add a little salt and cook the cassava for 15 minutes after gaining pressure. Turn off the heat and beat the cassava in the pan using a bread mixer or blender.

Tip: When chopping cassava, don’t forget to remove the middle part of it, which contains a hard fibre that is not good to eat.

Cassava Soup

Separately, chop the pepperoni or bacon and fry in a pan or skillet over low heat to loosen the fat without burning. When golden, add the remaining onion and garlic, season with the remaining paprika and black pepper and saute until wilted.

Tip: Let the pepperoni or bacon fry in the fat. If it doesn’t drop enough fat to sauté the onion and garlic, add 1 tablespoon of oil.

Cassava Soup

Put the pressure cooker back on the heat, add a little more water and also add the shredded chicken and pepperoni stew, onion and garlic. Wait for it to boil and turn it off. Add chives or cilantro and mix with the broth.

Cassava Soup

Your delicious cassava soup with chicken is ready! Add a little more chives or cilantro when serving, accompany them with toast seasoned with oregano and enjoy this comforting meal. Enjoy your food!

Chicken adobo: the recipe of the typical Filipino meat dish

Chicken adobo is a unique dish typical of oriental cuisine, especially Filipino cuisine. It is a meat-based preparation – not only chicken, but also pork or beef – fish or vegetables, and requires the chosen ingredient to be macerated in an emulsion based on soy sauce, white wine vinegar, flavourings and spices (adobar is a Spanish term which literally means “marinate”); the initial browning and then the slow cooking in the pan will allow the aromas and flavours to be released, ensuring a tender and juicy final result. Find out how to make it perfectly following our recipe step by step and serve it as tradition dictates, accompanied with basmati rice and seasoned with the marinating liquid.

Chicken adobo
Chicken adobo

Transfer the chicken to a serving dish and garnish with the sesame seeds, the spring onion cut into slices and the chopped chilli. Serve with hot rice, sprinkle with a drop of the marinade and serve (7).

Advice

If you like, you can use a whole chicken, cut into pieces, or just the legs and wings, for an even more succulent result; you can also replace it with pork or beef. If, on the other hand, you prefer fish, try it with shrimp, squid or cuttlefish.

You can substitute soy sauce with tamari and white wine vinegar with red wine or apple if you prefer a sweeter and less strong taste. You can also add aromatic herbs, such as a bay leaf or sage.

Before cooking the basmati rice, rinse it thoroughly under cold running water to remove any impurities; for an impeccable result, respect the right ratio between rice and water: for each glass of rice consider 1 and a half glasses of water. If you like, you can also flavour it with curry, turmeric, cumin or saffron.

storage

The chicken adobo can be stored in the refrigerator, inside a special airtight container, for a maximum of 1-2 days.

How to prepare wild rice with lentils

Wild rice with lentils

Combine the lentils in a saucepan and add the carrot, peeled and cut in half, 1 peeled shallot and the bay leaf; cover with about 100 ml of cold water (1), put on the stove and cook for about 30 minutes, until tender.

Wild rice with lentils

Rinse the rice thoroughly and then collect it in a pot; pour about 350 ml of water (2), cover with the lid and cook until tender and the cooking juices well absorbed.

Wild rice with lentils

Meanwhile, in a pan, brown the remaining peeled shallot with a drizzle of oil and a few sprigs of rosemary (3).

Wild rice with lentils

Shell the cooked rice with a fork, pour it into the pan with the bottom (4) and let it flavor for a few moments.

Wild rice with lentils

Add the lentils, well drained (5), add salt and cook for a few minutes over low heat.

Wild rice with lentils

Transfer the rice with the lentils to individual plates and complete with the chopped chilli and a drizzle of raw oil. Sprinkle with lemon juice and serve wild rice with lentils (6).

Advice

For our recipe we have chosen wild (or wild) red rice, originally from the Camargue area, in France; if you prefer, you can also use the black one (Zizania Aquatica): it is a grass that grows spontaneously in the swampy areas of North America and is characterized by an intense, aromatic and “chestnut” flavour.

Sprinkle the rice with a generous splash of lemon or lime juice: it will give the preparation an extra edge. If you like, you can also add chopped fresh coriander and a few cubes of ripe avocado.

Instead of the small and very tasty Castelluccio lentils, you can also use the red peeled ones, which will cook in a few minutes. For greater convenience, you can also use legumes already boiled and stored in glass jars.

If you love salads with colourful and fragrant rice, here are all the varieties to try in the kitchen; if, on the other hand, your passion is lentils, here are the best recipes featuring this legume.

storage

Wild rice with lentils can be kept in the refrigerator, in a special airtight container, for 2 days.
